- made famous by and were a specialty of the old Brown Hotel in
- Louisville. This is a pretty good version (of which there are many!).

- HOT BROWNS

- 1-2 slices of white bread per person.
- sliced chicken or turkey
- 2 slices of broiled bacon per slice of bread
- thick cheese sauce

- Preheat oven to 500 degrees F. Toast bread on one side only, and place
- in oven-proof individual serving dishes. Spread sliced chicken or turkey
- on bread, top with 2 slices of bacon. Pour cheese sauce over all. Place
- in oven just long enough to bubble sauce. Top with paprika for garnish
- and serve immediately.

- THICK CHEESE SAUCE

- 3 tablespoons butter
- 3 tablespoons flour
- 1/2 c. grated sharp cheddar cheese
- 1 c. milk
- salt and cayenne pepper to taste

- Melt butter in saucepan or double boiler. Add flour and blend well. Add
- cheese and beat until smooth. Slowly add milk, stirring constantly.
- Cook til sauce is thick and smooth (about 4 minutes). Add salt and cayenne.

- The sauce is basically just a Mornay sauce. I have also had these with a
- slice of tomato atop the bacon. A Kentucky staple, with many individual
- variations possible.
